Sugar flower keeps longer than a fresh flower. Sugar flower also look delicate and can be used for wedding cakes or other specialty cakes. If edible flowers are sugared they make for a tasty treat, too.
Sugar flower can be made of any flower that has thin petals. For sugar flowers use Daffodils, daisies, cosmos and other flowers with similar petals. They will work. Thick petaled flowers like lilies don't work as sugar flowers. Also, flowers that are bunched together like roses, dandilions, and carnations won't work either. Buds of any flower will not sugar properly.
Sugar flower preparation must begin with clipping the flower stems diagonally from the plant and placing them immidiately in water. These flowers should be picked in mid-afternoon, after the dew has gone and they have opened up. Sugar flower must be cleaned from any bugs. Dust off them before bringing flowers inside the house. Leave the flowers for about an hour just to make sure that all the bugs are gone.
Suger flower is covered with mixture of egg white and berry sugar. Put white of one egg in a bowl and lightly beat. Pour about a cup into a bowl and put off to the side with the egg white. Use a brush to paint your sugar flower. When the sugar flower has dried it will be hard and crusty.
Sugar flowers can be put on any cake. Just put a small dot of icing down and carefully place the sugared flower on top of it. You may press gently on the center of the sugar flower to make it stick. MAKE SURE YOU KNOW WHICH FLOWERS ARE EDIBLE BEFORE EATING THEM!!!
